Colibrí Mexican Bistro lies in the heart of San Francisco’s bustling Theatre District, just one block of Union Square. Spanish for "hummingbird," Colibrí combines the simplicity of authentic family in a charming, turn of the century cantina setting.
Colibrí Mexican Bistro specializes in the authentic dishes of Central Mexico, the cuisine Resmex owners Sylvia and Eduardo Rallo grew up with in their native Cuernavaca. The cuisine combines rich flavors, textures and traditions from ancient Aztec and Mayan cultures, balanced with influences from Spain and France. The results are a nuanced Mexican cuisine true to its roots, yet prepared with a refined touch evident in fine restaurants in Central Mexico. Classic sauces like Oaxacan moles and creamy guajillo chile salsas are prepared with rare imported peppers, seeds, nuts and chocolate. Other exotic ingredients such as huitlacoche (a fungus growing on corn sometimes referred to as “Mexican black truffles”) enhance the unique gastronomic experiences that are waiting to be discovered at Colibrí
